Roasted Summer Squash is our recipe this week inspired by Vibrant Farms listing it as just in. This recipe is both crispy with the coating, and tender with the roasted squash. It pairs well with chicken and fish, or could be added to linguine at the last minute almost as a topping so it doesn't lose it's crispness and get soggy.
